Black beluga lentils are easy to cook and work well in salads and side dishes. Just simmer in broth until tender then drain and season with salt and a dash of lemon juice. Try cooking them with onions, garlic and fresh herbs, tossing them into roasted vegetables and serving with a dollop of Greek yoghurt.
