Black eyed beans add a delicious hearty and creamy texture to soups and stews. Containing lots of soluble fibre, folate, magnesium, vitamin A, iron, Vitamin B, and potassium they are ideal for those following a Mediterranean diet or for vegans and vegetarians.
To prepare; Soak the beans for 12 hours (or overnight) in plenty of water, drain and rinse thoroughly.
To cook; Put the beans in a saucepan and cover with water. Bring to the boil and simmer for approximately one to one and a half hours or until soft.
