Freekeh is common in Mediteranean and Middle Eastern cuisine. It is not actually a grain, but is made from young wheat grain, picked whilst it is still green. It is then dried, roasted and finally the grain is rubbed off the wheat head itself. It has a nutty, chewy and slightly smoky flavour that adds depth to soups and stews.
As it is made from young wheat grains it is not gluten free, but it is highly nutritious, containing more fibre, protein and minerals than wheat, and is suitable for vegetarians and vegans.
