Freekeh is young, green, durum wheat that has been roasted and rubbed to expose the nutty green grain inside – a process originated in the Middle East over 1,500 years ago. Freekeh is high in vitamins and minerals, and in both fibre and protein. In fact, freekeh has notably more fibre than brown rice and even quinoa!
It has a distinctive smoky flavour and works beautifully in soups, stews, casseroles or salads.
Cook wholegrain freekeh for approx. 35-45 mins or until tender in water. Rinse the grain before and after cooking.
