Ground galangal comes from a dried root very similar to ginger but its flavour is sharper, spicier, and slightly more peppery than ginger. It is an important ingredient in South East Asian dishes especially Thai curry pastes and often accompanies lemongrass as the two have a natural affinity to each other.
Try blending ground galangal with garlic, chilli, lemongrass, and lime leaves to make spicy pastes.
