A multi-purpose lemon cake mix that can be used to create cupcakes, loaf cakes, muffins and much more!

Method;

Place the mix into a mixing bowl fitted with a beater.  Combine all the liquids and gradually add on a slow speed.  After about one minute increase the speed to and mix for a further 3 minutes.  Blend in any inclusions (i.e. chocolate drops). 

400gm lemon cake mix, 

3 medium eggs (175gms),

150gm vegetable oil 

112gm water. 

Baking guidelines(ovens vary so please adjust times accordingly)

Muffins; 200deg.C (400F) - 20 - 25mins (mini muffins), 25 - 30mins (standard) and 30 - 35mins (jumbo/mushroom muffins)

Loaf cakes 180 C (360F) 40 - 45 mins
